A highly eco friendly fabric, Linen is made from flax fibre, a renewable and sustainable resource that requires only a fifth of the pesticide and fertilizer and half the water that cotton does.  It is a rotation crop that purifies the soil and leaves it clean for the next crop.  Linen is also biodegradeable and recyclable.
